Ramps belong to the onion family and are native to North America. They are, perhaps, one of the few indigenous wild produce still preserved here. These wild leeks are delicate plants that add a robust flavor to dishes. Much like spring onions, the whole plant is edible with the leaves being milder in flavor than the bulb! Scones are a great way of enjoying the flavor. They make for a perfect snack or accompaniment to leisurely brunches.

BIG ASS EGG SALADS
This is story of several meals that I typically eat when I am on my own. A good egg, a few other scraps of leaves and shavings and I am a happy girl. Mostly it is the egg.

Let me start with the science.
People have been substituting everything from olive oil to milk and milk products with coconut driven ones. Coconut cream in place of whipped cream in desserts and ice creams; coconut oil instead of olive or vegetable oils and coconut sugar for cane sugar. These are certainly great experiments...
Yet, last week, as I was preparing for my upcoming trip to Europe, I ran out of milk and yogurt for my morning breakfast. I also ran out of granols, which, isn't an issue, since I love oatmeal in the cold months. The only thing I had was half a can of thick coconut milk from a Asian curry evening. Hello there. And Welcome to another mid-week edition of my mind's inner workings! The current loop playing on my mind circles around Iowa caucus, Bernie Sanders's social media campaign success, and Inequality.
Well what does all of this have to do with the recipe of the moment? Not a whole lot, except possibly everything. New nutritional research and latest President (therefore USDA reach) are all major variables in how the food system shapes up in the coming years. So our next President hopefully is not pro big-Ag or big CPG because that's where all the trouble is.
But, perhaps, we need to take a page from Mr. Sanders and keep harping the one note of Food Sustainability and if we can find a way to link that to income inequality.... I mean, the possibilities are endless!!! ;-)
