Mango No-Bake {Mexican} Cheesecake
Years ago, when I lived in the UES, I would hike a mile North every so often to stock up on fresh corn tortillas, avocados (I was not a prolific eater of it then!), mangoes, and the CHILLIES! Since I moved out, I have been .. well.. rather cheating on the cuisine, tagging every taco I made as it, every chill-chocolate rub as dry mole.

I recently did a Perugina chocolate making class at Eataly in NYC and it was a lot of fun! I got to make my own bacis and also take away a really yummy chocolate olive oil cake that we frosted with cherry mascarpone frosting. I share some photos and recipes from that class here.
Also, I wanted to put forth an idea.. That of celebrating new beginnings each week and making every Sunday a holy one, in your own way...!

This is truly one of the best creative times of the year. Between Super Bowl, Valentine's, Grammy's and the Oscars, there are so many reasons to come together as an online community and celebrate. And, there is such an explosion of awesomeness that it really is very, very hard to not be swept by it all. Even if one is an institutionalized skeptic!
Today, I have a matcha pudding for you, served as a trifle with lemon cookies. I have an interesting relationship with matcha. And, well, I suppose green tea in general.
